Heather Marold Thomason is a whole-animal butcher and the founder of Primal Supply Meats, a company committed to sourcing direct from local farmers who raise animals in natural, healthy environments and manage their land responsibly. Primal Supply provides sustainable, pasture-raised meats to both professional kitchens and home cooks throughout Philadelphia via their wholesale and subscription programs and recently opened a traditional retail butcher shop on East Passyunk Avenue.

Heather left a successful career in graphic design to pursue the trade of whole-animal butchery with the intention of supporting local, sustainable food systems. She apprenticed at North Mountain Pastures in Newport, PA, where she learned to raise pastured animals from birth to slaughter, and went on to train and work at The Local Butcher Shop in Berkeley, CA. In 2014, Heather relocated to Philadelphia where she became Head Butcher at Kensington Quarters. There she worked closely with area livestock producers and processors to source whole animals for the then butcher shop and restaurant. In 2016 she founded Primal Supply Meats and in the Spring of 2018, opened a brick and mortar butcher shop in the heart of South Philadelphia. Heather also hosts private classes and demonstrations on whole-animal butchery and is an adjunct professor at the Culinary Arts department at Drexel University.
